Bracketing is when you take several photographs of the same scene at different exposure settings.
One Stop Under
Aperture: f/16
Shutter: 1/750th
Normal
Aperture: f/11
Shutter: 1/750th
One stop Over
Aperture: f/8
Shutter: 1/750th
Bracketing is helpful when the camera's light meter may have difficulty determining the exposure.
For example, you may want to bracket when photographing at night.
You can also use bracketing to make the colors in a scene richer.
Underexposure by about one-half to one stop.
You can set the camera to take various quantities of exposures.
And, you can set how much to change each exposure, such as .5 stop or one full stop.
You can also use Exposure Compensation to vary your exposures.
