Read this if you're using Photoshop Elements to send your e-mails, along with Outlook Express or the Adobe E-mail Service.
You can easily edit the default subject line and signature texts.
Go to My Computer and open your Local Disk (C:) drive.
Then, click the following folders: Program Files > Adobe > Photoshop Elements 4.0 > shared_assets > locales > en_us > email > signatures.

To edit, right click the file, and open it with Notepad.
The Notepad window looks like this.
Edit the text, and then save your new version.
Go to File > Save, or press Ctrl + s.
If you're unable to edit a file, right click the file.
Click Properties, and deselect Read-only if it's checked.
